Apple Hill Cake



 

 
Mom had bought apples to make Apple Hill Cake for school but then ended up making Lemon Bars instead...and I wanted some dessert, so mom said I could go ahead and make Apple Hill Cake it's the first time I made it but turned out delicious and yummy if I do say so myself...while the cake is baking the entire downstairs smelled like apples and cinnamon....oh it's to die for DELICIOUS!!! Hope you enjoy this family favorite!!
Wet Ingredients
  • 4 Cups peeled diced apples
  • 2 Cups Sugar
  • ½ cup Vegetable or Canola Oil (as long as it’s a flavorless oil)
  • 2 eggs
Dry Ingredients
  • 2 Cups Flour
  • 1 tsp Salt
  • 2 tsp Cinnamon
  • 1 tsp Nutmeg
  • 2 tsp Baking Soda

 
Directions
 
Preheat Oven to 350 Degress
 
In a large bowl combine Sugar Oil and Eggs and mix together (it will be semi-thick) then add your diced Apples and mix together
 
In a separate bowl sift together all of the dry ingredients and then add to wet mixture, combine until well incorporated but DO NOT OVERMIX otherwise the cake won’t come out as airy.
 
Pour mixture into a greased 9x13 pan and make an even layer (make sure it’s a fairly deep pan because the cake will rise) Bake for 1 hour and your kitchen will smell like cinnamon and apples its heaven….then afterwards let cool for 30 minutes and then cut into squares and Enjoy!
