Rolled up Chicken Dinner




I made this for dinner last night. I saw it on a recipe blog (I ♥ recipe blogs can't you tell?) It was so delicious. Jenny Flake(the creator of this recipe) used panko bread crumbs but I didn't have panko so I used regular bread crumbs and it works just as well so don't stress if you don't have panko. Also this recipe seems like it can be versatile as well instead of mashed potatoes use rice....delish...Anyway this recipe was a success. Try it and let me know what you think!! Thanks Jenny.   • 4 Chicken Breasts (or thighs whichever you prefer)
  • 1½ Cups Prepared Mashed Potatoes (cooled)
  • 2 Cups Steamed Broccoli chopped into small pieces
  • ½ Cup Cheddar Cheese
  • ½ Cup All Purpose Flour
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Pepper
  • 1 beaten egg
  • 1½ Tablespoon Ranch Dressing seasoning Mix
  • 1½ Cups Bread Crumbs (Panko or Regular style Bread Crumbs whichever you have on hand)
  • 10 oz can Cream of Chicken Soup
  • 1 Cup Milk
  • 1 Cup Steamed Broccoli chopped
Prep step
Pound out chicken to about ¼ -½ inch in thickness, spread thin layer of mashed potatoes over each chicken. Top with cheese and then broccoli and then carefully roll and secure with toothpicks.

Dredging step

Place flour, Salt in pepper in bowl, Place beaten egg in another bowl, and bread crumbs in another bowl. Roll chicken in flour mixture, then in egg mixture, and then in bread crumb mixture. (it will be messy but it’s ok) Place on baking sheet that has been lined with a silpat (if you don’t have a silpat just make sure your baking sheet is sprayed really well with cooking spray)

Cooking Step

Bake at 350 F. (preheated) for 30-35 minutes or until chicken is done (the juices with run clear) Then Let rest for 10-15 minutes

Sauce Step

Place Cream of Chicken Soup in saucepan, with milk and the other remaining 1 Cup of broccoli warm through then spoon over chicken and enjoy
